The Concept

The Black Pearl Awards were created from a simple idea: that caviar, one of the world’s most refined gastronomic icons, deserves to be evaluated through the quality of the product itself.

Unlike traditional luxury evaluation systems, where reputation, rarity, origin, or brand image can influence perception, The Black Pearl Awards place the caviar at the center of the judging process. Each entry is assessed for the qualities that truly define excellence: appearance, grain and texture, aroma, flavour, aftertaste, freshness, and processing quality.

The main caviar awards are conducted through a strictly blind tasting process. Every sample is coded anonymously and presented to the jury with no indication of brand, producer, or origin, ensuring that each caviar is judged fairly and independently.

Beyond taste, The Black Pearl Awards also recognize the wider values shaping the future of caviar: traceability, CITES compliance, sustainability, ethical practices, craftsmanship, innovation, and producer vision.

Blind Tasting Protocol

International Producers

Caviar producers worldwide may submit their premier selections for evaluation by an independent panel of chefs.

Sustainability Commitment

Participation is reserved for CITES-registered producers, securing responsible and transparent sturgeon farming.
